1 small onion, chopped (about 1 cup)
1 1/2 cups shredded carrot
1 3/4 tsp salt, divided
3 tbsp flour
3/4 cup warm low-sodium chicken stock or broth
3/4 cup warm heavy cream
1 cup warm whole milk
1/4 tsp nutmeg
2 cups shredded sharp cheddar cheese
3/4 lb cavatappi pasta
3 cups chopped broccoli (however small or large you prefer)
1/8 tsp ground black pepper
