Butternut Squash Ravioli with Brown Butter and Sage
The choice to use fresh pasta is totally up to you. If you do decide to go ahead and make your own.
Recipe Ingredients
1 pound of fresh pasta
8 cups butternut squash, cut into ½ inch cubes
1 ½ tablespoons olive oil
½ teaspoon ground cinnamon
¼ teaspoon ground cardamom
⅛ teaspoon ground nutmeg
½ teaspoon salt
2 ounces softened cream cheese
½ cup parmesan cheese (plus extra for garnish)
1 stick + 2 tablespoons of unsalted butter
15 sage leaves, plus more for garnish
Salt to taste.
