Cheesy Corn, Cheddar and Chipotle Dip
I highly recommend the ever-so elegant Ritz cracker to accompany this flavor-packed dip, but any old wheat thin, triscit or other highly desirable equivalent will work lovely as well.
Recipe Ingredients
2 ears of corn (about 2 cups)
1 cup non-fat greek yogurt
3 ounces cream cheese, softened
1 cup shredded sharp cheddar cheese
2 chipotle peppers, finely chopped
2 green onions, chopped
½ teaspoon garlic powder
¼ teaspoon salt
