Chicken Bolognese
This Healthy Chicken Bolognese is a lighter version of a classic. Chicken thighs are slow-cooked in a red wine and vegetable tomato sauce and tossed with aldente whole-wheat spaghetti noodles for a healthy take on a classic bolognese sauce.
Recipe Ingredients
2 tsp olive oil
2 lbs boneless, skinless chicken thighs
1/2 cup diced onion
1 cup diced carrot
1 cup diced celery
2 large garlic cloves
1 tsp kosher salt, plus more for seasoning, divided
1/2 cup red wine (I used a pinot noir)
1 tbsp. tomato paste
26 oz strained tomatoes or tomato puree
1/4 cup water
1 tsp sugar
1 tsp dried basil
parmesan cheese rind
3/4 lb whole-wheat spaghetti
