  1 medium onion, chopped

  2 1/2 cups diced celery

  1 lb sweet Italian sausage
  3 tsp kosher salt, divided
  2 tbsp fresh sage, chopped
  1/2 cup dried cranberries
  2 1/2 – 3 cups chicken stock
