Cream of Mushroom Soup

Recipe Ingredients
2 tbsp unsalted butter
1/2 cup onion, diced
2 large garlic cloves, minced
24 oz cremini mushrooms, sliced
4 oz shiitake mushrooms, sliced and stems removed
5 sprigs thyme
1 1/4 tsp kosher salt, divided
1/4 cup all purpose flour
1/2 cup dry sherry
3 cups low-sodium chicken stock , room temperature or warm
2 tsp sugar
1/2 pint heavy cream
3/4 tsp apple cider vinegar
