  1 tbsp tahini
  1 small garlic clove, grated
  1 1/2 tsp sumac

  2 tbsp olive oil
  2- 15 oz cans chickpeas, rinsed and drained
  3/4 cup chopped roasted red peppers
  1/2 cup diced red onion
  1 1/2 cups diced cucumber
  1/4 cup chopped cilantro
