Lightened-Up Coconut Red Velvet, Cheesecake and Blueberry Trifles
These lightened-up red, white and blue trifles will be the hit of your Fourth of July party!
Recipe Ingredients

1 box red velvet cake mix
1 package instant vanilla pudding mix
¾ cup melted coconut oil
1 cup water
Pinch of salt
3 eggs
Cheesecake Filling:
16 ounces light cream cheese, softened
6 tablespoons powdered sugar
½ cup skim milk
1 teaspoon vanilla extract
Pinch of salt
Remaining Ingredients
3 pints of blueberries
1 container frozen light whipped topping
6-8 pint sized mason jars or trifle cups
