Lightened Up Roast Beef Pepper and Cheddar Sandwiches
Since Lent has begun, when Friday rolls around, without fail, I crave a big fat juicy burger. Or a perfectly grilled steak. Or a brat smothered with ketchup and mustard. Or pretty much anything that’s not seafood or veggie based.
Recipe Ingredients
1 pound thinly sliced medium-rare roast beef
1 medium onion, thinly sliced
1 green pepper, thinly sliced
2 teaspoons olive oil
2 cups 2% cheddar cheese
½ cup low-fat evaporated milk
4 hoagie rolls, split in half
