Skinny “Sour Cream” Chicken Enchiladas
These are great straight out of the oven, but Kevin liked them even better the next day, when he “couldn’t tell” that these were made with whole-wheat flour tortillas instead of white flour. Either way you eat them, straight out of the oven or the next
Recipe Ingredients
1 tablespoon olive oil
½ tablespoon butter
½ cup onion, diced
2 garlic cloves, minced
½ teaspoon garlic powder
¼ teaspoon salt
1 teaspoon ground cumin
½ teaspoon ground coriander
¼ teaspoon cayenne pepper
3 ½ tablespoons flour
2 ½ cups hot chicken broth
½ teaspoon salt
1 - 6 ounce container Chobani plain greek yogurt
1 rotisserie chicken, meat shredded
¼ teaspoon cumin
¼ teaspoon coriander
8-10 whole-wheat flour tortillas
1 cup low-fat mozzarella cheese
