Spinach, Chicken and Cheese Enchiladas with Jalapeño Cream Cheese Sauce

4 cups shredded rotisserie chicken
1 10 ounce package frozen spinach, drained and squeezed until all the moisture is out

1 cup shredded monterrey jack cheese
1¼ cups heavy cream or half and half
6 ounces cream cheese
