Strawberry & Rhubarb Handpies
Makes six pies
Recipe Ingredients
Crust:
2 cups all purpose flour
1teaspoon salt
¾ cup shortening cubed
4 tablespoons cold butter cubed
1 tablespoon sugar (plus more for sprinkling)
3-4 tablespoons ice water
½ cup whipping cream
Filling:
1 cup chopped rhubarb (about ¼ lb)
2 cups chopped strawberries (about 1 lb)
¼ cup of sugar (or more, if strawberries are not sweet enough add a couple more tablespoons)
2 tablespoons of flour
¼ teaspoons of salt
Juice of a quarter lemon
