Warm Quinoa and Kale Salad with Roasted Veggies

Recipe Ingredients
1 cup quinoa
2 cups low-sodium chicken stock
1 1/2 tsp kosher salt, divided
1 cup chickpeas, rinsed and drained
2 cups cubed sweet potato (1/2-inch dice), about 2 medium sweet potatoes
1 large fennel bulb, sliced
2 tbsp olive oil
2 tbsp brown sugar
3 cups chopped curly kale
1/2 cup sliced almonds (can also use walnuts or pecans)
1/4 - 1/2 cup lemon vinaigrette
